Today’s recipe is Crockpot Beef & Potatoes with Rosemary (Pot Roast) prepared by me!

Okay, this is one of my favorite pot roast recipes. I LOVE using the crockpot you save money on your energy bill, and you’re not heating up the house on a hot Summer day…that’s a win win!! Not to mention the whole house smells yummy for hours. Another great thing about crockpot cooking is you can buy cheaper cuts of meat, and because you’re cooking it low and slow it usually comes out tender and delicious!

Ingredients:

  1. 1 pound medium red potatoes, cut into fourths
  2. 1 cup baby-cut carrots
  3. 3 tablespoons dijon mustard
  4. 2 tablespoons chopped fresh or 1 1/2 teaspoons dried rosemary leaves, crumbled
  5. 1 teaspoon chopped fresh or 1 1/2 teaspoons dried thyme leaves
  6. 1 teaspoon of salt
  7. 1 teaspoon pepper
  8. 3-pound beef boneless chuck roast, trimmed of fat
  9. 1 small onion, finely chopped (I use lot’s more because I love onions)
  10. 1 1/2 cups beef broth

Arrange potatoes and carrots around edge in 4-5 quart slow cooker.

Mix mustard, rosemary, thyme, salt and pepper, spread evenly over beef. Place beef in cooker (it will overlap vegetables slightly). Sprinkle onion over beef. Pour broth evenly over beef and vegetables.

Cover and cook on low setting for 8-9 hours.

Remove beef from cooker; place on cutting board, cut into slices. Remove vegetables from cooker with slotted spoon. To serve, spoon beef juices from cooker over beef and vegetables.

** Not I will often double the mustard/rosemary/thyme  mixture because I like “bold flavors”

Cost Breakdown after coupons:

  1. Chuck Roast – $4.50 during Meat BOGO sale
  2. Potatoes – $2.00
  3. Carrots – $1.00
  4. Beef Broth $.50
  5. Seasonings & Mustard app. $1.00

Total cost after coupons I’d have to say probably about $9.50. This recipe is usually good for 2-3 meals for the 3 of us! I like to serve this with rolls!

Today’s recipe is Crockpot Pizza Chicken prepared by me!

Okay, this is one of my favorite go-to recipes, it’s fast, simple, inexpensive, delicious and best of all it’s made in a crockpot. I love crockpot cooking because it’s quick, frugal as you’re not heating up the oven and great for Summer weeknight meals when you don’t want to heat up the house! 

Ingredients:

  1. 1 1/2 – 2 pounds boneless skinless chicken breasts (could use thighs)
  2. 1/2 teaspoon salt
  3. 1/4 teaspoon pepper
  4. 1 med. onion sliced
  5. 2 medium bell peppers cut into strips (use green, red or one of each!)
  6. 2 cups spaghetti sauce (I used Jewel’s new Essential Everyday Pasta Sauce)
  7. 1 package (16 oz) rotini pasta (I used Jewel’s New Essential Everyday Pasta)
  8. 1 Cup shredded Mozzerella cheese
  9. Italian Seasoning to taste

Cut chicken into medium size pieces and place in bottom of 3 1/2 cup to 6 quart crockpot. Sprinkle with sat & pepper. Top chicken with onion and bell peppers. Add pasta sauce.

Cover and cook on low heat setting 4-6 hours or until juice of chicken is no longer pink when centers of thickest pieces are cut.

Cook and drain pasta as directed on package. Sprinkle Italian seasonings on top and add mozzarella cheese during last 1/2 of cooking. Once pasta is cooked I just mix into the crockpot before serving, this way I dirty one less dish!

Considering this is “Pizza Chicken” you can get creative with the ingredients if you’d like. Think about what you like on pizza and add to crockpot or top your individual serving: olives, pepperoni, spinach, mushrooms…..anything!

  1. Chicken Breast - $4.50 during Perdue BOGO sale
  2. Pasta Sauce Free from Jewel (but my threshold price is about $1.50)
  3. Pasta Free from Jewel (but my threshold price is about $.50)
  4. Mozzarella Cheese = $1.00 after coupons
  5. Onions & Bell Pepers $1.00

Total cost after coupons I’d have to say probably about $6.50 (or $8 if I had paid for the pasta & sauce)

Today’s recipe is Meaty Baked Beans prepared by me!

Okay, I’m really stretching the “Healthy” portion of the title above but in honor of 4th of July and Cookouts I bring you Meaty Baked Beans, which my husband would argue is a meal but I’d say you’re safe calling it a side dish! I’m warning you, make this recipe once and you will be strong armed to bring it to every cookout or potluck for the rest of your life…yes it’s that good!

Ingredients:

  1. 8 oz ground beef
  2. 8 oz bulk pork sausage (I use Bob Evans Hot because we love Spicy! I just get the tube kind)
  3. 1 cup chopped onion
  4. 2 cloves garlic, minced
  5. (2) 16-oz cans pork & beans in tomato sauce
  6. (2) 15-oz cans kidney or pinto beans, rinsed and drained
  7. (2) 15-oz cans butter beans or black beans, rinsed and drained
  8. 1 cup bottled barbecue sauce
  9. 4 slices bacon, crisp-cooked, drained, and crumbled
  10. ½ cup packed brown sugar
  11. ¼ cup water
  12. 2 T lime juice
  13. 2 T yellow mustard
  14. 1 tsp chili powder (or more if you like spicy)
  15. 1 tsp cumin
  16. ¼ tsp ground black pepper

In a large skillet cook beef, sausage, onion and garlic until meat is brown. Drain fat. Place meat mixture in a 4 ½ to 6 quart cooker. Stir in the pork & beans, kidney beans and butter beans, barbecue sauce, cooked bacon, sugar, water, lime juice, mustard, chili powder and pepper.

Cover and cook on low heat setting for 5 to 6 hours or high heat setting for 2 ½ – 3 hours (turns out way better if you cook on low for 5-6 hours)!

** You can vary the beans by what you have on hand or prefer, but the Butter Beans I’d say are a must. Often substitute one can of Black Beans for one of the cans of Butter Beans because I love black beans!

** Also if you prefer you can skip the ground beef and use all pork sausage, that’s what I usually do!

Cost Breakdown after coupons:

  1. Beef & Pork Sausage - $4 after coupons
  2. Spices = I’d say about a dollar or less
  3. Beans: I try to spend $.89 a can or less

Total cost after coupons I’d have to say probably about $10 dollars!

Today’s recipe is Italian Meatball Sanwiches prepared by Mr. Chi-Town Cheapskate!

Motivation: The hubby threw these together a couple weeks ago and they were delicious so I made him make them again and write down what he did this time! He totally destroyed my kitchen in the process as I knew he would!

Ingredients:

  1. 2 lbs. 8 oz Ground Italian Turkey (2 packages of Jennie-O)
  2. 2  lg. eggs
  3. 1 cup petite diced red bell pepper
  4. 1 medium onion petite diced
  5. 2 cloves of garlic minced (or more if you like garlic, we used 4)
  6. 1/4 cup parmesan
  7. 1/2 cup italian seasoned bread crumbs
  8. 1 Tablespoon spicy italian seasoning (can us Italian Seasoning)
  9. salt & pepper to taste
  10. Jarred Pasta Sauce (we used Classico) or home made
  11. Sandwich Rolls (we used Hoagie style buns)
  12. Shredded Mozzerella cheese

Pre-heat oven to 35o. Mix ground turkey and two eggs with a fork until well blended. Then add all other but the bread crumbs, mix with fork. Slowly incorporate bread crumbs and mix with fork.

Use an ice cream scoop to measure out about 20 meatballs. Add 1 tablespoon of olive to a skillet set on medium heat and brown all sides of meatballs. May have to do in batches.

Spread some pasta sauce on bottom of oven-proof  9 x 13 baking dish and add browned meatballs. Spoon some sauce over top of meatballs. Bake uncovered at 350 for 45 minutes or until the meatballs reach an internal temperature of 175 – 180 degrees (we used a digital thermometer to keep track of internal temperature).

Spread garlic butter on hoagie style buns and toast until lightly brown. Add meatballs, spoon small amount of pasta sauce over meatballs, sprinkle with mozzerella cheese return to toaster oven and toast until cheese is melted. We served ours with corn on the cob! Enjoy

  4. Rolls = Free after coupons
  5. Onion, Garlic & Bell Pepper = $1.50
  6. Corn on the Cob (side dish) $.56 cents for 3 ears

Total cost after coupons I’d have to say probably about $8 dollars!
