Today’s recipe is Crockpot Pizza Chicken prepared by me!
Okay, this is one of my favorite go-to recipes, it’s fast, simple, inexpensive, delicious and best of all it’s made in a crockpot. I love crockpot cooking because it’s quick, frugal as you’re not heating up the oven and great for Summer weeknight meals when you don’t want to heat up the house!
Ingredients:
- 1 1/2 – 2 pounds boneless skinless chicken breasts (could use thighs)
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 med. onion sliced
- 2 medium bell peppers cut into strips (use green, red or one of each!)
- 2 cups spaghetti sauce (I used Jewel’s new Essential Everyday Pasta Sauce)
- 1 package (16 oz) rotini pasta (I used Jewel’s New Essential Everyday Pasta)
- 1 Cup shredded Mozzerella cheese
- Italian Seasoning to taste
Cut chicken into medium size pieces and place in bottom of 3 1/2 cup to 6 quart crockpot. Sprinkle with sat & pepper. Top chicken with onion and bell peppers. Add pasta sauce.
Cover and cook on low heat setting 4-6 hours or until juice of chicken is no longer pink when centers of thickest pieces are cut.
Cook and drain pasta as directed on package. Sprinkle Italian seasonings on top and add mozzarella cheese during last 1/2 of cooking. Once pasta is cooked I just mix into the crockpot before serving, this way I dirty one less dish!
Considering this is “Pizza Chicken” you can get creative with the ingredients if you’d like. Think about what you like on pizza and add to crockpot or top your individual serving: olives, pepperoni, spinach, mushrooms…..anything!

Total cost after coupons I’d have to say probably about $6.50 (or $8 if I had paid for the pasta & sauce)

Sounds yummy!!!! Do you prefer breast over thighs ( sometimes when I cook breasts in the crockpot its a little dry )

Lisa I prefer breasts as I don’t like dark meat. The sauce in the recipe keeps the breasts super moist!
