We all know that couponing saves you cash, but now what do you do with that stockpile of food? How do you put it together to make a great meal?
Today’s recipe is Mini Chicken Pot Pies prepared by me!
First let me say I usually like to make Pot Pie from scratch but this recipe is great in a pinch!
Ingredients:
- 3 cups frozen Peas & Carrots
- 2 cups cooked cooked chicken
- 1/2 cup milk
- 1 teaspoon dried thyme
- 2 cans (10 3/4) condensed cream of chicken soup
- 1 can Pillsbury crescent rolls
- 1 egg
- 1 Tablespoon water
- 1/2 teaspoon dried thyme
Head oven to 400. In a 2-quart saucepan mix peas and carrots, chicken, milk, 1 teaspoon thyme and soup. Heat to boiling over med-high heat, stirring occasionally. Divide mixture evenly between (4) 1/2 cup oven safe crocks (I found mine at a garage sale)!
Unroll crescent dough. Place crescents evenly over each bowl.
In a small bowl, mix egg and water. Brush mixture over crescent dough. Sprinkle 1/2 teaspoon thyme over dough. Bake 11-13 minutes or until crusts are golden brown.
Cost Breakdown after coupons:
- Chicken: used left over roasted chicken from night before
- Soup: .40 per can
- Veggies: Just under $1.00
- Crescent Rolls: .30
Total cost after coupons I’d have to say probably less then $3.00 including chicken!

Can’t wait to try it gonna search the freezer to find some peas but will use turkey from thanksgiving instead of chicken.
